The key to making a Cappuccino lies in steaming the milk correctly and then free-pouring the milk immediately after you finish steaming. When you make a Latte, you use a spoon to hold back the foam, and then scoop 1/4 inch of foam on top of the beverage. When you make a Cappuccino, you never use a spoon, allowing the milk and foam to naturally separate in the cup. If you wait too long to pour, the milk will begin to separate from the foam in the steaming pitcher and you'll get a Latte or a very wet Cappuccino.
